The rye bread with a surprising centre

Made this beautiful 100% dark rye sourdough using 100% rye starter (a first for me). The starter was super easy to get going, and this recipe/method for the starter & bread is in the @andreagentl Cooking With Mushrooms book via @riotrye_ - I did a sunflower sesame loaf & baked it in my pan de mie pan (forever favorite). Also, don’t do what I did - attempting to keep your starters cozy in the oven with the light turned on. And then burning them up because you forget. 😱🔥 Starters are resilient,
