Hi bakers! I’d love to make a meringue-based filling for macarons without using butter. My macarons are all dairy free and seed-oil free - so vegan butter and shortening are out, too. Ganaches of all chocolate kinds are lovely, and they’re my standard jumping off point for fillings. But some flavors carry through better with a lighter base.

I typically try to avoid too sweet or too buttery textures because I like the filling to bring a balance with the sweetness of the cookie.

2020年10月19日 · It always depends on the cake/macaron/whatever which kind of filling is the best. Sometimes a simple ganache fits perfectly with the other flavours altogether. I, myself, prefer italian or french buttercream if I want something airy and light. If I have little to no time I either make a simple ganache or a german buttercream

2021年8月12日 · So many amazing macaron pics on this sub and I'm not gonna act like they're not impressive. That said, I've seen so many pictures of overfilled macarons. If your filling is about as thick as the macaron itself, it's too much. Don't be afraid to have a thin layer of a sweet filling! It'll still look great and taste even better.

I am making macarons for an outdoor event and it's going to be around a 100 degrees and wanted ideas for fillings. But I was leaning more towards a ganache filling. Have you considered ermine frosting?
