Even tertiary amines are water-soluble because of its ability to form hydrogen bonds. Methylamines (mono-, di-, and tri-) and ethylamine (gases) have ammonia-like smell. Most other amines are liquids and have odors resembling that of raw fish (strong, disagreeable odors).
It is shown that measurements of the 1H chemical shifts of amide N–H protons in chloroform and in DMSO solvents are sufficient to determine the extent of hydrogen bonding of the N–H protons in a variety of compounds containing the amide group. Two recent examples are presented from protein and structural chemistry.
